The process uses water and ethyl acetate to selectively remove caffeine after the green coffee is steamed; it is then steamed again and dried back to its original moisture level. This is a a gentle, targeted extraction method, and sugarcane EA processing is widely used because it aims to preserve the coffee’s underlying character.
