Elvin Daza farms 200,000 coffee trees at Finca Las Nieves in Colombia’s Perijá region. This lot blends 40% Caturra and 60% Colombia, selectively picked at peak ripeness before 150 hours of anaerobic fermentation. The cherries are then mechanically dried at 40°C for seven days, building sweetness, winey fruit and complexity while keeping the cup clean.
